Didn't know what to make for dinner so decided to use what I had on hand.
Home canned chicken & home canned veggies (corn, peas, celery & carrots) fresh potatoes, additional fresh carrots, onions. Sauteed all fresh veggies & then made a roux (1/3 c. flour) in the same pan (3/4 c. stock & 1 - 1.5 c. milk). Added chicken, canned & fresh veggies. Let cool to almost room temp.
Already had the pie crust in balls in the freezer which I took out to thaw earlier.
Rolled dough for bottom crust & then put in dish then added cooled filling.
Put top on & pinch just like my grandma used to do.
Bake for 1 hour & 30 minutes
Let cool for 30 minutes then enjoy!

DFW,

It was delicious Sandy & we have leftovers. Come on by!
That looks SO GOOD! ('Course, it's late afternoon right now and my lunch has long since been forgotten!) Is there a reason you let the filling cool before completing the pot pie?
Hey Mama Pea,
Thank you. I let cool to let the 'gravy' thicken a bit & it's the perfect temp to eat after that 30 min rest.
OOps, I meant the part where you said you rolled out the bottom crust and then "added cooled filling." I had never thought to cool the filling at that point and wondered if I was missing something.
It seems to help alleviate a soggy crust if it isn't too warm when I fill it.
(sorry for commenting here, hope that is OK) You had asked to be included on my Homesteading/Simple Living blog list & also sharing that list on your own blog when complete. I'm finalizing that list now for publication soon but I need more information from you. Would you please go to your entry on this post & note the state in which you live? Thanks, here's where you added your blog to the list request --> http://taylormadehomestead.com/calling-all-homesteading-or-simple-living-blogs/
Thanks!
