Pesto (updated for Sandy)

Made Pesto yesterday. Very easy. Toasted pine nuts, grated parmesan cheese, garlic, basil, olive oil, salt & pepper Plus a splash of lemon juice. I made two batches & froze one for later.

The one on the left was made first. Already darkening.
Update:

Pesto Measurements

1/3 c. pine nuts (or any kind you have on hand)
1-2 cloves garlic
2 c. washed dried basil (packed very tightly) I used just a bit more because that was what I had picked.
1/3 c. olive oil
1/3 c. parmesan cheese (+ a bit more if you really like parmesan)
salt & pepper to taste
1/2 t. lemon juice

Pulse nuts & garlic until crumbly.
Add next 4 ingredients & process until desired consistency. I added a bit more oil at this point.
Stir in lemon juice.
Can be frozen.

We did go to the country last weekend, but the guys moving the buildings only got 1 moved. They were supposed to arrive around 4:00p but didn't get there until after 6:00p. So, they just left it & came back on Monday to unload & level it. The other building still sits on a broken trailer waiting for them to fix the wheel so they can eventually move it (if we're lucky) .

The Crepe Myrtles are doing great, one even decided to go into full bloom!

I'm taking another vacation day today & will be making eggplant parmesan. Might even head over to a couple of nearby Estate Sales.

There was one here this morning, I wanted to go but had some things to do here. Oh well, there will always be another one. Eggplant parmesan sounds good, haven't made it in a long time, you have given me an idea!!

I'm off to an estate sale this morning, too! Fascinating that you are moving buildings!

I agree - moving buildings is unheard of here LOL

Pesto looks yummy :) Enjoy.

Melanie,

I have an over abundance of eggplant right now. I make it very very fattening, more like eggplant lasagna.

No luck at today's sale. There's another one at a really nice house tomorrow.

Moving them wasn't our first choice but you know when older parents get something in their mind they won't give up.

'Cuz they don't build 'em like they used to..." ;) I love the blossoms on the crepe myrtle - it's going to be so lovely when they are all in bloom!

Susan, You are right about that! Thanks for stopping by.

DFW,

I love homemade stock, I was canning my stock today too.
Ended up with 9 quarts. When I made the broth yesterday, my dogs wouldn't leave the kitchen. Apparently it smelled good to them. Actually, I think they were waiting to get a bone.

Sorry to hear you didn't get the wicker set. I know you really liked it, maybe this was a sign............wait until the next estate sale?

Tomorrow there's going to be a very large auction out at the lake, the owners of a local stable tour business are closing their doors. 2 homes and all the contents will be sold, along with all the contents of the barn and every out building, horses, trailers, all kinds of tools, and farm equipment. I think our entire family will be going to this auction.

Your pesto looks really good, would you by chance share your recipe with the exact measurements ?

Sandy,

That auction sounds like it is going to be awesome! I don't feel too bad about the wicker set. I really don't have anywhere to put it.

I'll update the blog post with the exact measurements for the pesto.

Good luck at the sale!
